Luxurious Cream Cake

Ingredients: eggs; 160 g caster sugar; 60 g wheat flour; 60 g potato starch; 1 tsp baking soda; 150 ml semi-skimmed milk; 350 ml whipped cream; 2 egg yolks; 1 tbsp caster sugar; 1 tbsp potato starch; 4 leaf gelatine; 2 tsp vanilla sugar; 300 g Mashed berries; 300 ml whipped cream; Fresh berries

Make a perfect luxurious cream cake dessert. Decorate with fresh berries or other fruits.

Ingredients

Cake batter

Eggs
160 g Caster sugar
60 g Wheat flour
60 g Potato starch
1 tsp Baking soda

Filling

150 ml Semi-skimmed milk
350 ml Whipped cream
2 Egg yolks
1 tbsp Caster sugar
1 tbsp Potato starch
4 Leaf gelatine
2 tsp Vanilla sugar
300 g Mashed berries

Garnish

300 ml Whipped cream
Fresh berries

Instructions

Step 1

Heat the oven to 175 °. Grease and bake a round cake tin, about 24 cm in diameter.

Step 2

Beat eggs and sugar together until light and creamy. Mix the wheat flour, potato flour and the baking powder together and stir it into the egg mixture.

Pour the mixture into the cake tin. Bake in the lower part of the oven for about 30 minutes. Let the cake rest a few minutes before being left on a cooling rack.

Step 4

Mix milk, 1.5 cup cream, egg yolks, sugar and potato flour in a saucepan. Heat on a low heat while stirring, until the cream thickens and the first bubble appears. Lift the pan away from the heat.

Step 5

Leave the gelatine leaves in cold water for 5 minutes. Remove them from the water and place them in the warm cream. Stir until the gelatine melts.

Step 6

Put the saucepan in cold water to cool the cream. Occasionally stir. Whisk 2 cups of cream with vanilla sugar to form stiff peaks and mix into the cream when it is cool.

Step 7

Divide the cake into three disks. Put a layer of cream on two of the disks and place the mashed berries on the cream. Layer the cake together.

Step 8

Beat the cream. Spread some cream around the edge and on top of the cake. Put the rest in a piping bag and pipe the cream on the cake. Garnish with fresh berries.
