Instructions

Step 1
  • Heat the butter in a large saucepan and add your onion, cooking over a medium heat until soft. If the onion becomes too dry, try adding a splash of water.
Step 2
  • In your saucepan, add a knob of butter and your sliced celery and leek, then leave on a low heat with a lid on. After 5 mins add your potato, cover with a lid and cook for another 5 mins.
Step 3
  • Pour in your stock and add any chunky bits of stalk from your broccoli. Then leave to cook for a further 10-15 mins, until all the vegetables are nice and soft.
Step 4
  • Add the rest of the roughly chopped broccoli and Parmesan rind, then leave to cook for another 5 mins.
Step 5
  • Add your milk, making sure the mixture doesn't boil as the milk might curdle. Then remove the Parmesan rind from the soup and transfer the pan contents to a blender, blitzing until smooth.
Step 6
  • Once you're happy with the consistency of your soup, share it out into your fanciest bowls, drizzle with a swirl of cream, then enjoy your belly-warming, waste-reducing meal!
Step 7
  • For the Croutons, preheat your oven to 180°C/Gas 4/350°F.
Step 8
  • Mix all your crouton ingredients together on an oven tray, then bake for approx 30 mins, tossing halfway through.
Step 9
  • Remove your croutons from the oven once golden brown, then serve alongside your delicious green soup!"
