Cream of Pea Soup

Name: Cream of Pea Soup
Ingredients: 3 tbsp Spreadable (Melted); 1 white onion; 10 g plain flour (1 tbsp); 2 Red Whole potatoes (Peeled and diced); 4 cups chicken broth; 1 kilo Bag frozen peas (Defrosted & Drained); 125 ml cream; 3 tbsp Chopped fresh parsley; 2 tbsp Chopped dill; salt and Pepper (to Taste)

Green and healthy with plenty of seasoning for flavour, cream of pea soup is a fine vegetarian option. Arla Lactofree cream and red potatoes help bulk it out.

Instructions

Step 1

Melt the Lactofree spreadable and add onion - cook until translucent and softened.

Step 2

Put in flour and cook for 3 minutes. Add potatoes and chicken broth and bring to a simmer.

Step 3

Simmer mixture until potatoes are tender then add peas and simmer for 2 minutes.

Step 4

Puree soup in a blender or food processor; divide into batches if necessary.

Step 5

Return soup to oven and stir in cream, parsley and dill. Season soup with salt and pepper and serve hot.
