Spiced Pumpkin Cake

Ingredients: 500 g pumpkins; 200 g butter; 200 g sugar; 3 eggs; 200 g wheat flour; 1½ tsp ground ginger; 2 tsp baking powder; 150 g icing sugar; 2 tbsp Freshly Squeezed orange juice; Strips Of oranges Peel (Unwaxed)

A lovely spongy pumpkin cake with orange glaze that tastes great!

Ingredients

500 g Pumpkins
200 g Butter
200 g Sugar
3 Eggs
200 g Wheat flour
1½ tsp Ground ginger
2 tsp Baking powder
150 g Icing sugar
2 tbsp Freshly Squeezed orange juice
Strips Of oranges Peel (Unwaxed)

Instructions

Step 1

Remove the seeds from the pumpkin. Cut the pumpkin into large wedges and peel them (do not cut too close to the peel).

Step 2

Cut the pumpkin meat roughly - there needs to be about 300 g of it.

Step 3

Mix the butter and sugar well. Add one egg at a time to the mixture, stirring well between each egg. Stir the pumpkin meat and orange peel into the egg mixture.
