Instructions

  • Wash cucumbers, cut them in half lengthwise, and remove the seeds.
  • Finely grate cucumber and sprinkle with salt. Drain in a strainer for 30 minutes.
  • Mix lactose-free yogurt, garlic, olive oil, lemon juice, and dill in a blender or food processor and season with salt and pepper.
  • Blend at full speed for 1 minute. Add the drained cucumber.
  • Leave to rest for a while and serve chilled.
