Tip

Day-old bread soaks up juices and liquids very well and makes for an excellent foundation for the toppings, so opt for this if you have any leftover bread at hand.

Topped with fresh tomato salad and pine nuts

Top the creamy and crunchy bread base with a fresh tomato salad and pine nuts for a kick of colour and flavour. The tomato salad is bursting with freshness from the mix of herbs and vegetables. Basil and lemon zest provide a refreshing touch that mixes well with the subtle sweetness of the tomatoes. Shallots give the tomato salad a delicate onion-like aroma, while pine nuts give the dish a delightful bite as a final flourish.

Easy appetiser perfect for a crowd

These avocado bruschetta are the perfect little crowd-pleasers with their vibrant colours and incredible flavour. Serve them as easy appetisers for a larger group, or make them as a wonderful side dish for a larger dinner experience. You can go many different routes with this recipe, but you can never go wrong.

Get creative with the recipe

Feel free to get creative with the bruschetta and add your own touch. A popular addition is also a simple addition. With just a drizzle of balsamic glaze over the finished bruschetta, you give the dish a sweet and tangy flavour that fits perfectly with the avocado spread and tomato salad.

Sourdough bread provides a good flavour, but you can also use other types of bread. While ciabatta and baguette are popular choices, whole-grain bread will also serve the purpose wonderfully—the types of bread range from light and airy to chewy with nutty and earthy notes.

Experimenting with different herbs is also a neat way to modify the avocado bruschetta to your preferences. Instead of basil, you can easily use parsley, cilantro, or mint. Each herb brings its own flavours and aromas, from earthy and citrusy to bright and aromatic.
