Instructions

Almond bottom
  • Bake almonds in the oven at 150°C for about 20 mins until golden. Let them cool completely.
  • Cut dates into smaller pieces and mix them in a food processor along with the cooled almonds. Mix until you have an evenly mixed ball.
  • Press the mixture evenly into the bottom of a 20-22 cm springform tin with baking paper. Leave in the fridge to cool.
Cream cheese filling
  • Soak gelatine leaves in a bowl of cold water for 10 minutes.
  • Place cashews in a blender with lactose-free cream cheese, coconut oil, almond butter, rice malt syrup, vanilla extract, and cinnamon. Blend until you have a velvety mass.
  • Warm juice and zest of lime in a small saucepan and dissolve 3 leaves of gelatine in it. Pour a few tablespoons of the cream cheese mixture into the saucepan and stir until smooth. Pour the entire contents of the saucepan back into the blender and blend well.
  • Remove the cake from the fridge and pour the cream cheese filling into the springform tin. Leave to set in the fridge for about 4 hours.
To serve
  • Remove the cake from the springform tin and decorate it with chopped almonds and fresh blueberries before serving.

Tip

A non-bake treat needs the right consistency. Try soaking the cashew nuts overnight to make them easier to blend into the smooth mixture you need for the filling. Similarly, if you deem your dates a bit dry, soak them for a couple of minutes in warm water before blending.
